These high-protein Cottage Cheese Mashed Potatoes are a creamy, nutritious twist on a classic favorite—perfect for a healthy and satisfying side dish!
Ingredients
10 Yukon Gold potatoes – diced
8 cloves garlic
½–1 teaspoon salt
1 tablespoon salt (for boiling water)
½–1 teaspoon black pepper
¼ cup milk of choice (whole milk recommended)
1 cup cottage cheese
3 tablespoons chives – finely chopped (plus more for topping, optional)
2–4 tablespoons butter (optional topping)
Instructions
1. Add diced potatoes and garlic cloves to a large pot. Cover with water, add 1 tablespoon salt, and bring to a boil. Cook for 15–20 minutes until fork-tender.
2. Carefully remove garlic a few minutes before potatoes if it softens early. Drain the pot.
3. In a blender, combine cooked garlic, cottage cheese, and milk. Blend until smooth.
4. Transfer drained potatoes to a large bowl. Pour in the cottage cheese mixture, add chives, black pepper, and extra salt to taste.
5. Mash everything together using a potato masher. Stir with a spatula to fully incorporate if needed.
6. Serve warm with optional butter and a sprinkle of extra chives.
Notes
For extra flavor, stir in roasted garlic or fresh herbs.
Use full-fat cottage cheese for a creamier result.
Great as leftovers—try it in shepherd’s pie or stirred into soups.
