Description
These savory-sweet potato puffs make the perfect Thanksgiving appetizer or side dish! Packed with fresh herbs and wholesome ingredients, they’re easy to make and bursting with flavor.
Ingredients
2 cups mashed sweet potatoes (about 2 large sweet potatoes)
3 large eggs, beaten
1 cup grated parmesan cheese (or nutritional yeast)
2 tablespoons chopped rosemary
1/4 cup cooked bacon, diced (optional)
1/2 teaspoon salt
1/4 teaspoon black pepper
Sour cream or Greek yogurt (optional for serving)
Instructions
1. Boil peeled sweet potatoes in water for 15–20 minutes until fork-tender. Drain and mash.
2. Preheat oven to 400°F and grease a mini muffin tin.
3. Mix mashed sweet potatoes with eggs, 3/4 cup cheese, rosemary, bacon (if using), salt, and pepper.
4. Scoop mixture into muffin tin, filling each cup completely.
5. Sprinkle remaining cheese on top and bake for 20 minutes.
6. Let cool for 5 minutes, then gently remove with spoon.
7. Serve warm with sour cream or yogurt if desired.
Notes
Freeze after baking for up to 2 months.
Swap parmesan for nutritional yeast to make it dairy-free.
Add spices like paprika or cayenne for extra flavor.
